4 cups Arugula
2 cups Mucci Farms Smuccies™ Blackberries
8-10 slices pancetta, cooked crisply and broken
½ cup shaved Manchego cheese
¼ cup thin sliced red onion
Blackberry Balsamic Dressing:
¼ cup olive oil
8 Mucci Farms Blackberries
2 tbsp balsamic vinegar
2 tbsp water
2 tsp dijon
2 tsp maple syrup
salt and pepper to taste
In a large shallow bowl or platter, layer arugula, blackberries, pancetta, manchego and onion.
In a deep blender cup, add oil, blackberries, vinegar, water, dijon, maple syrup, and salt and pepper. Blend with a hand/immersion blender until emulsified. Strain out any blackberry seeds if desired.
Serve salad drizzled with dressing.
