10 Mucci Farms Vero Premium Tomatoes
10-15 thin slices double smoked bacon, cut in half and cooked
3-4 Mucci Farms Naked Leaf Butter Lettuce leaves, torn into pieces
Cornichon pickles to garnish
Spicy Basil Mayo:
½ cup mayonnaise
1 cup loose packed Mucci Farms Naked Leaf Living Basil
1 tbsp hot sauce
Place mayonnaise and basil in the cup of a hand/immersion blender. Blend until smooth. Stir in hot sauce and set aside.
Cut a very thin slice from the bottom of a tomato so that it sits without rolling. Slice the tomato in half and scoop out the core along with the seeds and juice from both halves. Repeat with remaining tomatoes.
Dollop a teaspoon of spicy basil mayo into each tomato half.
Layer the tomato bottoms with butter lettuce and bacon. Finish with top tomato half.
Garnish BLV's with a cornichon on top and serve with any remaining spicy basil mayo on the side.
