½ cup (125 ml) white onion, finely diced
2 tsp. (10 ml) olive oil
3 cloves garlic, minced
1 pkg. (640 g) Mucci Farms Mini Bella Mushrooms
1 tbsp. (15 ml) unsalted butter
1 tbsp. (15 ml) fresh thyme, chopped, plus sprigs for garnish
1 tbsp. (15 ml) fresh parsley, chopped
2 tbsp. (30 ml) balsamic glaze
Salt and pepper to taste
In a large sauté pan on medium high heat, warm oil. Cook mushrooms, onions and garlic until softened and lightly browned, 25 minutes.
Stir in butter and herbs. Sauté for 5 minutes. Remove from heat and stir in balsamic glaze. Season with salt and pepper to taste. Garnish with fresh thyme.
