BLT Salad

This healthy twist on the traditional BLT, gets fresh croutons toasted in tangy dressing, lots of crisp lettuce and itty bitty juicy tomatoes.

  • ⅓ cup Greek yogurt

  • ⅓ cup mayonnaise

  • Zest and juice of 1 lemon

  • ¼ cup chopped onion

  • 2 cloves garlic

  • 1 tbsp pepper

  • 1 tbsp Dijon mustard

  • 5 cups cubed focaccia bread

  • 2 heads Mucci Farms Naked Leaf Lettuce Butterhead Green, torn

  • 2 cups Mucci Farms Dot Tomatoes

  • 375g bacon strips, cooked crisp

  • In a blender cup, combine yogurt, mayonnaise, lemon zest and juice, onion, garlic, pepper and Dijon. Blend until smooth.

  • Pour ½ cup dressing into a large mixing bowl. Toss with cubed focaccia.

  • Heat a large non-stick skillet over medium-high heat. Toast bread, string frequently for 5-7 minutes or until golden brown. Remove to a plate and let cool.

  • In a large bowl or serving platter, arrange lettuce, tomatoes, toasted bread, and bacon. Sprinkle with basil leaves and serve with dressing.
