⅓ cup Greek yogurt
⅓ cup mayonnaise
Zest and juice of 1 lemon
¼ cup chopped onion
2 cloves garlic
1 tbsp pepper
1 tbsp Dijon mustard
5 cups cubed focaccia bread
2 heads Mucci Farms Naked Leaf Lettuce Butterhead Green, torn
2 cups Mucci Farms Dot Tomatoes
375g bacon strips, cooked crisp
In a blender cup, combine yogurt, mayonnaise, lemon zest and juice, onion, garlic, pepper and Dijon. Blend until smooth.
Pour ½ cup dressing into a large mixing bowl. Toss with cubed focaccia.
Heat a large non-stick skillet over medium-high heat. Toast bread, string frequently for 5-7 minutes or until golden brown. Remove to a plate and let cool.
In a large bowl or serving platter, arrange lettuce, tomatoes, toasted bread, and bacon. Sprinkle with basil leaves and serve with dressing.
