Greek Cucumber Rolls

  • 4 Mucci Farms Mini Cucumbers

  • ¼ cup finely minced Mucci Farms Orange Bell Pepper

  • ¼ cup finely minced Mucci Farms Grape Tomatoes

  • ½ small ripe avocado

  • ½ cup crumbled feta

  • 3 tbsp. finely minced red onion

  • 2 tbsp. finely minced Kalamata olives

  • 2 tbsp. chopped fresh oregano

  • 1 tbsp. lemon juice

  • ½ tsp. lemon zest

  • Using a mandolin slicer, peeler or chef knife, slice cucumber lengthwise into thin ribbons. In a medium bowl, mash avocado with a fork; stir in feta, pepper, tomatoes, onion, olives, oregano, lemon juice & zest.

  • Place 1 tbsp of filling at one end of cucumber slice and roll up securing with a toothpick.

  • Repeat with remaining slices.

  • Garnish with fresh oregano leaves if desired.
