Citrus Shrimp Salad

This salad is a great main dish. With it’s sweet, light dressing and the combination of shrimp and citrus, you’ll be happy you made it.

  • 2 cups Mucci Farms Naked Leaf Living Watercress

  • 2 cups Mucci Farms Naked Leaf Living Lettuce

  • 2 Mucci Farms CuteCumbers™ Snack-Sized Cucumbers

  • 1 pink grapefruit, segmented

  • ½ avocado, sliced

  • 12 large cooked shrimps

  • Pepper, to taste

  • HONEY LIME VINAIGRETTE:

  • 3 tbsp. lime juice

  • 3 tbsp. olive oil

  • 2 tbsp. honey

  • 2 tbsp. chopped chives

  • 1 tbsp. white wine vinegar

  • Run a peeler lengthwise along cucumbers to make ribbons.

  • Arrange cucumbers on a platter along with watercress, lettuce, grapefruit segments, avocado and shrimp.

  • Whisk together lime juice, olive oil, honey, chives and vinegar.

  • Drizzle with vinaigrette just before serving. Season with pepper to taste.
