2 cloves garlic
2 tbsp chopped Romano cheese
2 tbsp chopped Parmesan cheese
2 tbsp pine nuts
1 cup packed Mucci Farms Living Basil leaves
1 ½ tsp kosher salt
½ tsp cracked black pepper
¼ cup olive oil
2lbs Mucci Farms Prova Premium On-The-Vine Tomatoes, quartered
2 avocados, cut into bite-sized chunks
½ cup diced red onion
Garnish: pine nuts, basil leaves, pepper, and lemon wedges
Place garlic, Romano cheese, Parmesan cheese and pine nuts in a mortar and pestle. Pound ingredients with pestle into large crumbs, add basil, salt and pepper; continue pounding to roughly breakup and tear basil leaves, stir in oil
In a large bowl, gently toss rough pesto with quartered tomatoes, cut avocados, and diced red onion
Serve on a platter garnished with pine nuts, basil leaves, pepper and lemon wedges
