¼ cup minced Kalamata olives
¼ cup minced green olives
Juice of 1 lemon
2 tbsp olive oil
1 tbsp maple syrup
1 clove garlic, minced
2 tsp each fresh oregano and thyme leaves
1 lb Mucci Farms Seedless Sweet Peppers, halved
Wooden or metal skewers
Olive oil
Salt and pepper to taste
In a small bowl, combine olives, lemon juice, oil, maple syrup, garlic, oregano, thyme, and pepper.
Thread halved peppers onto skewers. Brush liberally with olive oil and season with salt and pepper.
Grill peppers over high heat for 1-2 minutes on each side or until just softened.
Serve grilled peppers with chunky tapenade.
