Toasted Walnut & Sweet

Grape Tomato Pasta Salad

An impressive pasta salad with flavourful herbs, sweet grape tomatoes, crunchy olive oil toasted walnuts and a hearty helping of grated Romano cheese.

  • 1 cup walnut pieces

  • ¼ cup olive oil

  • 2 cups Mucci Farms Sun Drops™ Sweet Grape Tomatoes, halved

  • ½ cup chopped parsley

  • ⅓ cup chopped basil

  • ⅓ cup julienned red onion

  • ⅓ cup white wine vinegar

  • ¼ tsp chili flakes

  • 450g orecchiette or other small pasta, cooked, rinsed and drained

  • 2 cups arugula leaves

  • 1 cup freshly grated Romano cheese

  • Salt and pepper to taste

  • Place walnuts and olive oil in a small skillet over medium heat. Let cook stirring frequently for 3-4 minutes or until nuts are golden brown. Remove from heat and drain oil into a large bowl while setting walnuts aside.

  • To same large bowl with oil, add tomatoes, parsley, basil, red onion, vinegar, chili flakes and pasta, stirring to combine.

  • Just before serving, toss in arugula, Romano and walnuts and season with salt and pepper to taste.
