1 cup walnut pieces
¼ cup olive oil
2 cups Mucci Farms Sun Drops™ Sweet Grape Tomatoes, halved
½ cup chopped parsley
⅓ cup chopped basil
⅓ cup julienned red onion
⅓ cup white wine vinegar
¼ tsp chili flakes
450g orecchiette or other small pasta, cooked, rinsed and drained
2 cups arugula leaves
1 cup freshly grated Romano cheese
Salt and pepper to taste
Place walnuts and olive oil in a small skillet over medium heat. Let cook stirring frequently for 3-4 minutes or until nuts are golden brown. Remove from heat and drain oil into a large bowl while setting walnuts aside.
To same large bowl with oil, add tomatoes, parsley, basil, red onion, vinegar, chili flakes and pasta, stirring to combine.
Just before serving, toss in arugula, Romano and walnuts and season with salt and pepper to taste.
