1 each Mucci Farms red, orange and yellow Sweet Bell Peppers
¼ cup sundried tomato pesto
¼ cup grated parmesan
1 cup sliced Mucci Farms Blended Flavours Tomatoes
3 slices pancetta, sliced into 6 pieces each
2 mini pepperoni sticks, thin sliced
Mucci Farms Living Basil leaves to garnish
Honey to drizzle
Pepper to taste
Slice a pepper along the lobes from top to bottom to make 3-4 pizza slice shapes; repeat with remaining 2 peppers. Reserve any pepper trimmings for use in salads, soups or omelettes.
Spread inside of each pepper slice with about 1/2 tbsp sundried tomato pesto and arrange on a parchment lined baking sheet.
Sprinkle 2 tbsp grated parmesan over the slices. Top each slice evenly with sliced tomatoes, pancetta, and pepperoni; sprinkle with remaining 2 tbsp grated parmesan.
Bake in a preheated 400F oven for 15 minutes.
Top with basil leaves, a drizzle of honey and pepper to taste.
