36 - 48 Mucci Farms Tomato-X Tomatoes
2 fresh bunches of Mucci Farms Naked Leaf Living Basil
1 fine minced clove of garlic (medium size)
6 tbsp. extra-virgin olive oil
¼ cup fresh grated parmesan cheese
Ground black pepper and sea salt to taste
In a food processor; add all items including basil leaves (please omit any stems even if they are small). Use the “pulse” feature and keep using until all items are blended together.
Finish with extra virgin olive oil and use pulse until all items have been blended.
Using a small spoon or melon baller, carefully hollow out each tomato.
Place tomatoes aside. With a pastry bag, pipe the pesto mixture into the cherry tomatoes.
Add salt and pepper to taste.
