AVOCADO RANCH DIP:
½ cup mayonnaise
1 small ripe avocado
2 tbsp apple cider vinegar
1 tbsp water
1 clove garlic
½ tsp onion powder
¼ tsp each salt and pepper
2 tbsp each fresh chopped dill and chives
OTHER INGREDIENTS:
3 x 9oz bags Mucci Farms Veggies-to-Go™ On-The-Go Snacks for Kids
8 x 10-inch long skewers
8 sugar snap peas
1-2 purple heirloom carrots, peeled and cut into ⅛-inch slices
To make Avocado Ranch Dip: place mayo, avocado, vinegar, water, garlic, onion powder and salt and pepper in a blender cup. Blend until smooth. Stir in dill and chives. Keep refrigerated until ready to serve.
From the Veggies-To-Go bags, cut peppers into 1/2-inch thick rings.
To make Rainbow Veg Kabobs, thread skewers with veggies in the following order: red tomato, red pepper ring, orange tomato, orange pepper ring, yellow pepper ring, Cutecumber, snap pea, Cutecumber, and three slices of purple heirloom carrot.
Repeat steps to make 8 kabobs. Serve with Avocado Ranch Dip.
