1 cup feta cheese
3 tbsp feta cheese brine
1 tbsp water
1 tbsp honey
227g Mucci Farms Zingers Shishito Peppers
1 tbsp olive oil, divided
1 Mucci Farms Sweet Red Pepper, julienned
1 small onion, julienned
¼ cup fresh mint leaves
¼ cup fresh Italian parsley leaves
Olive oil
Salt and Pepper to taste
4 lemon wedges
Place feta, brine, water, and honey in a food processor. Blend until smooth. Set aside
Toss shishito peppers with 1 tsp oil in a large bowl, sear peppers in a large nonstick pan over medium-high heat, flipping frequently until skins have blistered and peppers have softened, then remove to a plate
Add remaining 2 tsp oil to same pan and sauté peppers and onion until golden
Spread whipped feta onto a large serving plate, top with sautéed peppers and onions. Scatter with mint and parsley leaves and top with blistered shishito peppers
Drizzle with olive oil and season with salt and pepper to taste. Serve with lemon wedges
